We have decided to make lapghans for ourselves in the Knitting Help Forum.

We are each choosing an lapghan pattern, color scheme, and size, and casting on the number of stitches we want on circular needles. We will knit for about 4 - 8 inches, then we will be trading with someone else, and continuing to knit on each other's lapghans.
I've gotten a good start on mine so far, and really like it. I'm using Lion Brand Wool-Ease yarn in autumn shades, and the "Rainbow" pattern from Berroco. http://www.berroco.com/exclusives/rainbow/rainbow.html
